S+S+S Roasted Pumpkin Seeds


Salty, Sweet, & Spicy Roasted Pumpkin Seeds!

Yeah, yeah, yeah, I know pumpkin is pretty much out for the year, but it’s my favoritest favorite thing and I just can’t get enough.. and its’ seeds are pretty awesome too. The other day I was annoyed that I didn’t have “snack” food around the house. I’m a snacker, whoops. So I was at the fruit and veggie stand near my apartment and large bags of pumpkin seeds behind the cash register caught my eye. Perfect snack- unsalted of course. Once I got home I realized that they were already roasted however. But this turned out to be perfect! They were roasted naked, so they had no flavor so I could do ANYTHING to them, aaaand they would take less time in the oven. Dopee. So I went to town- 1 normal average salty batch, 1 with a kick, and 1 cinnabon cinnamon flavor. Boom. Sticky cinnamon minus the cahbs, buttah, sugah, n guilt.

Spicy
1C pumpkin seeds
2 tsp olive oil
1 tsp maple syrup
1 tsp cayanne
1 tsp paprika
1 tsp chili powder
pinch (or 2) of salt

Salty + Pepper
1C pumpkin seeds
1/2 tsp salt (I’m not a wicked salty person, so you’ll probably want 1 tsp)
2 tsp olive oil
ground pepper

Sweet Cinnamon
1C pumpkin seeds
2 tsp coconut oil
1/2 tsp cinnamon
1/2 tsp coconut crystals
1 tsp maple syrup
pinch of salt

Salty & Sweet Cinnamon
1. Preheat your oven to 275.
2. Add your wet ingredients into a bowl.
3. Mix in your dry ingredients (everything but your seeds).
4. Add in your pumpkin seeds, about 1/2C at a time.
5. Evenly spread your seeds on a foil lined baking sheet in a single layer.
6. Bake for 7 minutes.
Spicy
1. Preheat your oven to 275.
2. Add your wet ingredients into a bowl.
3. Mix in your salt and 1/4 of your cayanne, paprika, and chili powder.
4. Add in 1/2C pumpkin seeds and mix until coated evenly.
5. Add 1/4 more spices.
6. Add in 1/2C pumpkin seeds and mix.
7. Add 1/4 more spice.
8. Add in 1/2C pumpkin seeds and mix.
9. Add the rest of your cayanne, paprika, and chili powder.
10. Add the rest of your pumpkin seeds and mix until even.
11. Evenly spread your seeds on a foil lined baking sheet in a single layer.
12. Bake for 7 minutes.
Now, the cinnamin ain’t too sweet, so if you want something sweeter, just add mas coconut crystals. You might be able to add more maple syrup as well, but it might get too goopy.

Experiment and go to town!
