Paleo Tacos! This is not a recipe but just a look at my dinner I had tonight. I’m posting it to hopefully inspire you to find alternatives to tacos if you crave them and are trying to remove gluten and grain from your diet.
You know how when you eat a hard taco shell (or even a soft one), it never stays together? When you bite into the hard shell it crumbles into a million pieces and all of the filling tumbles onto your plate? Or even the fact that you fill it up and it always spills out the back end of the shell? Well that didn’t happen to me! I used a lettuce piece as a taco shell boat and it was deeeelicious. The lettuce was soft enough to form to the amount of food stuffed inside yet crispy and crunchy from the spine of the lettuce leaf – magic really. The taco boat pictured has homemade jerk chicken, sautéed onions and mushrooms, jalapeños, chopped tomatoes, and homemade guacamole layered and piled on. Seriously, how can you go wrong with this?

(Also in the corner you’ll see corn arepas (gluten-free not Paleo). I had 1 arepa and it wasn’t that good, too thick and it fell apart more than the lettuce boats!)
