First things first. Hands down the only downside to cooking a ton is doing dishes. NYC doesn’t believe in dishwashers, it drives me crazy. I LOVE this tank top and want it so so badly… too bad it’s not exactly the truth however since I am dishwasher less 😦
The other day I was in a grumpy mood. Grumpiness can be easily solved by eating chocolate, FACT. I checked out my pinterest Paleo dessert board and perused for an easy, yummy looking recipe. (Also when grumpy, original recipes are nearly impossible to make and feel satisfied by). This little gem caught my eye. Another fact: I need a camera. It is impossible to take a half decent picture at night time with only my ceiling light with an iPhone4. Oy.
- ⅓ cup raw pecans
- ½ cup almond flour
- 4 tbs raw cacao powder
- 5 pitted medjool dates
- ½ tsp vanilla extract
- ½ tbs coconut oil
- 6 tbs coconut oil, melted
- 3 tbs coconut milk
- 1½ tsp vanilla extract
- 1 tbs + 1 tsp raw honey
- 1½ cups almond flour
- 3 oz chocolate chips, add more or less as desired
- using a food processor or a blender grind the pecans into course meal and place it in a separate bowl
- remove pits from dates and process it into a paste
- mix the pecan meal with the almond flour, cacao powder, date paste, vanilla extract and coconut oil
- line a 7×5 glass baking dish with parchment paper and spread the mixture until evenly distributed
- in a bowl, whisk together the coconut oil, coconut milk, vanilla extract and honey
- add almond flour and mix just until all ingredients are combined. You don’t want to over mix this or the almond flour will start to release its oils and become wet.
- gently fold in chocolate chips
- spread the cookie dough mixture on top of the brownie and use a piece of parchment paper to smooth the top of the cookie dough
- refrigerate until dough is firm, about an hour
- cut into square and enjoy. Keep refrigerated in an airtight container.
NOTE: This recipe was really delicious and totally hit the spot. The only thing I would change is the nuts used for the brownie portion. The pecans to me have a bit too strong of a flavor, perhaps I’d prefer cashews or macadamia nuts. Either way I totally enjoyed this recipe. Thanks Living Healthy with Chocolate!
