WOWzers. It’s been AGES since my last post. Unacceptable! I’ve surely still been cooking loads, but I mainly just cook on Sundays for the week to come because I have no other time to cook. I usually just spend 3ish hours in the kitchen and knock it all out. I make a huge batch of roasted veggies, breakfast quiches for the week, and a couple proteins; roasted chicken, chili, fish etc. Nothing new, and nothing that warrants a recipe since it’s ‘what can I make and throw together fastest?!’ Finally I had some time where I could make a load of stuff.
I have no clue why, but I felt the yearning to make applesauce! I also had several pears that were getting soft. I am suuuper picky with my pears. I hate eating soft pears. I like them super firm, pretty much right before they rippen is how I like ’em. So thought, why not throw them in?!
Serves: a lot, about 6 cups
Prep time: 15 minutes.. or as long as it takes you to peel everything 🙂
Cook time: 45 minutes
-1tbsp ground cinnamon
-3tbsp fresh squeezed orange juice
1. Core the apples and peel the apples and pears. Slice the fruit and toss into a braiser on medium heat.
2. Sprinkle the cinnamon and pour the orange juice on top of the fruit.
3. Cover the pan and let it cook for 40 minutes. At the 20 minute mark, mix everything around. At the 35 minute mark, use a potato masher to mush the fruit and make the sauce. Keep the lid off at that point going forward.
Yummy no added sweetener guilt-free apple sauce 🙂
